A Big Daddy weighs about 400 kg (roughly 880 lb) by our estimate. BioShock never gives an official weight or height. We added up a big, heavily spliced man of about 120 kg, an armoured diving suit of about 230 kg and a 50 kg drill. A real US Navy Mark V diving dress weighs about 86 kg.

Where the 400 kg comes from
BioShock and its sequels never list a weight for a Big Daddy, and the art books describe the look, not the mass. The design brief, quoted on Wikipedia, only asks for a protector so solid that “not even a shotgun blast could knock him off his feet”. So 400 kg is our estimate, built from three parts.
The man inside: Big Daddies are heavily spliced humans whose skin and organs are grafted into the suit, and they are far bigger than an ordinary man. We gave him 120 kg, a very big, very strong man. The suit: a real Mark V diving dress weighs about 86 kg, but a Bouncer adds a thick riveted carapace over the whole torso, a bigger helmet with eight portholes and the life support built into the shell. We put it at about 230 kg, roughly 2.7 times the Mark V and about half a real hard-shell diving suit. The drill, with its engine and exhaust over the right shoulder: about 50 kg. 120 + 230 + 50 = 400 kg.
Change the assumptions and the answer moves a lot. A soft canvas suit like the Mark V gives only about 215 kg. A suit as heavy as a real 1970s hard suit takes it to about 550 kg. 400 kg sits in the middle.
The real diving suits behind the design
The Big Daddy is built on the classic brass hard-hat diver. The US Navy’s Mark V standard diving dress came to about 190 lb (86 kg): a 55 lb copper and bronze helmet and breastplate, an 84 lb lead weight belt, two lead-soled boots of 17.5 lb each and the canvas dress itself. Most of that weight is there only to keep the diver standing on the bottom. The mixed-gas version weighed about 300 lb.
Wikipedia describes Big Daddies as wearing atmospheric diving suits, the rigid kind that keep the diver at surface pressure. Those are far heavier. The first JIM suits of the 1970s were cast magnesium, stood 6 ft 6 in tall and weighed about 1,100 lb (500 kg) in air with the diver inside.
Rosies, Bouncers and the other models
The models are not built the same. A Rosie wears a heavy fabric diving suit with a metal carapace over the upper torso and carries a rivet gun, so it should be lighter than a Bouncer, whose entire torso is covered in thick metal and which carries the big drill. Our 400 kg is for a Bouncer.
BioShock 2 added more types. The Alpha Series, including the player character Subject Delta, are described as less heavily armoured and more agile. The Rumbler carries a shoulder rocket launcher and deployable turrets, and the Lancer from Minerva’s Den is slimmer and slightly taller. None of them has an official weight either.
About 880 lb by our estimate, or roughly 400 kg. A lighter build in a soft diving suit could be under 500 lb, and one in a full hard-shell suit could top 1,200 lb.
Is there an official Big Daddy weight?
No. Neither the games nor the official art books give one, so every number online, including ours, is an estimate.
How tall is a Big Daddy?
There is no official height either. The BioShock Wiki lists Subject Delta at 7 ft 1 in (2.16 m) without citing a source, and Gaming Heads’ 1:4 scale Bouncer statue is 20 in tall, which works out to about 2 m for a hunched Bouncer.
Which is heavier, a Rosie or a Bouncer?
Almost certainly the Bouncer. Its whole torso is encased in thick metal and it carries a heavy drill with its own engine, while the Rosie wears a fabric suit with armour only on the upper torso.
How heavy is a real old diving suit?
The US Navy’s Mark V standard diving dress weighs about 190 lb (86 kg), helmet, weights and boots included. Rigid atmospheric suits are much heavier: a 1970s JIM suit weighed about 1,100 lb with the diver inside.
