The number is canon: the show puts Homer on the scale and has him read it out. The first time is in “Homer’s Night Out”, the tenth episode of season 1, aired on March 25, 1990. He steps on the scale during the family’s morning routine, says two hundred and thirty-nine pounds and calls himself a blimp, then a whale, before promising to exercise every morning.
In “Brush with Greatness” (season 2, April 11, 1991) he starts higher. After getting stuck in a water slide at Mount Splashmore, he weighs in at 260 lb (118 kg) and goes on a diet. By the end of the episode he has lost 21 lb and is back to 239, celebrating that he is “two-thirty-nine and feeling fine” and can use his belt’s original notches. Mr. Burns, whose portrait Marge is painting, is not impressed.

In “King-Size Homer” (season 7, November 5, 1995) the power plant brings in a morning exercise program. Homer learns that anyone who weighs more than 300 lb counts as disabled and can work from home, and works out that he needs to gain 61 lb. That puts his starting weight at 239 lb again.
He gets there by eating nonstop. On deadline day he is a pound short, and when the scale finally tips past 300, Bart points out that Homer’s gut is resting on the towel rack. Once it hangs free, the scale reads 315 lb (143 kg), 76 lb (34 kg) more than he started with. By the end of the episode, Mr. Burns pays for liposuction to take him back to his old weight.
